Beef Roast

1 Packet Brown Gravy

1 Packet Ranch Dressing

1 Packet Italian Dressing

2 cups beef broth

Optional steps to add additional flavor

1. The day before cooking, salt your roast and let rest in fridge

2. The morning of cooking, sear your roast on each side until brown

  • Add roast into crock pot
  • Mix the remaining ingredients separately 
  • Add on top of roast 
  • Cook on Low for 8 hours

Optional final step to make a one pot meal

1-2 hours before serving, add in chopped vegetables - onions, potatoes, carrots.

How to Make Your Own Brown Gravy

Using the drippings after pan frying cubed steak or pork chops

Make sure there is at least 2-3 tablespoons of oil in the pan, if not add in more

Add in 2 tablespoons of flour (I always use what I have left over from dredging the meat before frying)

Mix together

Start by adding in 1 cup of milk and continually stir while the gravy cooks on medium low,

MAKE SURE TO KEEP YOUR EYES ON THE GRAVY!

While stirring and watching, add in salt and pepper to your preference (taste test).  You can also add in Worcestershire for a bit more added flavor.

Once the gravy has reached your desired consistency, remove from heat and serve over top your pan-fried meat.

Cheeseburger Casserole

1lb Ground Beef

1 small onion, chopped

1 cup grated cheddar cheese

1 cup milk

1/2 cup Bisquik

2 eggs

  • Brown ground beef and onions
  • Spray 9in pie dish 
  • Add ground beef, onion mixture to dish
  • Top with cheese
  • Whisk together the remaining ingredients in a separate bowl
  • Pour over top of beef mixture
  • Cook at 400 for 25 minutes 

Instant Pot Beef Stroganoff

Stew Beef

1/2 Stick Butter

1 small onion chopped

1/4 cup sliced mushrooms

1 package Mushroom Gravy Mix

1 cup water

1/2 cup cooking sherry

1/2 cup sour cream

8oz package of egg noodles

  • Turn instant pot to Saute and add in butter
  • Once butter is melted add in stew beef and cook until browned
  • Add in onions and cook until translucent
  • Turn Saute off and add in the remaining ingredients minus the noodles
  • Set to cook for 10 minutes
  • While your stroganoff cooks, cook your noodles until done
  • Once your Instant Pot has done a natural release or a 5-minute quick release, open and mix in sour cream
  • Serve stroganoff over noodles

Egg Roll in a Bowl

1lb Dry Aged Ground Beef

2-3 Bags of Coleslaw Mix or 3-4 cups shredded cabbage

1 TBSP Sesame Oil

3 Gloves Minced Garlic

3 TBSP Soy Sauce

1/2 TSP Ginger

  •  Brown ground beef and set aside
  • Add in sesame oil, coleslaw mix, and garlic
  • Cook until cabbage begins to wilt
  • Add back in beef along with soy sauce and ginger
  • Mix well and serve hot
  • Top with green onions, chow mein noodles

*This recipe is easily adaptable to your preferences.  Stir fry any additional ingredients with cabbage mixture.  Protein can be substitute with a variety of different grounds.

How to Cook Beef Sausage

Have you tried our beef sausage?  Don't run away too fast, we're here to help.

1lb Beef Sausage

1 Bottle of your beer of choice (or Dr. Pepper, Coke)

Start by grilling your sausage. 

You could also sear sausage in a preheated cast iron skillet.

Once the sausage is browned, add in about 3/4 bottle of beer (or soda).

Let simmer for about 20 minutes.

Slice and enjoy with slice cheese as a snack, in a stir fry, over pasta, or even just by itself.

*Our preference, with small children, is Dr. Pepper.  It adds a sweet coating to the outside but still keeps the spice on the inside. 

Philly Cheesesteak Quesadillas

  • 1lb Ground Beef
  • Diced Onion
  • Diced Bell Pepper
  • Chopped Mushrooms
  • Cooking Spray
  • Mayo
  • 1 pack of provolone cheese slices
  • 1 pack flour tortillas

Brown ground beef, set to the side.

Cook onion until translucent. Add in pepper and mushrooms.

Either mix ground beef back in veggie mix or leave separate.

Spread mayo on one side flour tortilla. 

Add beef and veggies.

Top with 3 slices provolone.

For crisper quesadillas, pan fry in light oil until lightly brown.

Or bake at 350 for 5 minutes.

Taco Cups

This recipe makes 12 taco cups but could easily be doubled.

1lb Ground Beef

24 Wonton Wrappers 

2 cups salsa

Taco seasoning 2-3 tbsp

Cheddar Cheese

  • Preheat oven to 400.
  • Brown ground beef. 
  • Add in salsa and taco seasoning.
  • Spray muffin tin with olive oil cooking spray.
  • Lay wonton wrapper on each muffin mold.
  • Top with 1 tbsp ground beef, followed by a bit of cheese.
  • Lay another wrapper on top of beef and cheese to repeat.
  • Push done into mold.
  • Bake for 10-15 minutes.
  • Top with your favorite taco additions - sour cream, green onions, avocado.
  • To take it up a notch, try adding Jammin Jay's dip mix to your sour cream.

Sweet Potato Chili 

1lb Ground Beef

1 onion, diced

2 Medium Sweet Potatoes

S&P

1 tbsp + 2 tsp Chili Powder

2 tsp ground cumin

1 tsp garlic powder

1 can diced tomatoes

1 can tomato sauce

2 cans beans, your preference, drained

1 1/2 cup chicken broth

Using your Instant Pot - brown ground beef and add in onions until translucent.

Add in your seasonings and cook until fragrant.

Add in all your canned ingredients plus chicken broth.

Stir.

Set manual time for 10 minutes.

Serve with your favorite chili toppings/sides - sour cream, green onion, cornbread, tortilla strips.

For a little more heat - substitute 2 tsp chili powder for chipotle chili powder. And add in a diced pepper.

Bacon Cheeseburger Dip

  • 1lb L&S Dry Aged Ground Beef
  • 6 slices bacon, cut in 1'" pieces
  • 1/2 cup diced onions
  • 1 clove garlic, minced
  • 1 cup sour cream
  • 1/2 cup mayo
  • 1 1/2 cup mozzarella cheese
  • 1 1/2 cup cheddar cheese
  • 8oz cream cheese, room temperature

Brown beef.

Cook bacon pieces.  Remove from pan and add in onions; cook until translucent. Add in garlic and cook until fragrant.

Mix all ingredients together until smooth.  

Bake at 350 for 20-25 minutes

Beef Breakfast Bake

Ingredients

1 lb Ground Beef  1 1/2 cups grated cheddar cheese
1 TBSP Brown Sugar 8 Eggs
1 1/2 TSP Oregano 1 1/2 cups Milk
1 1/4 TSP Salt 1 TSP Mustard Powder
1/2 TSP Garlic Powder
1/2 TSP Onion Powder
 Pinch of Red Pepper Flakes
Black pepper

 

Preheat oven to 350

Brown ground beef, drain if necessary

Mix in brown sugar, oregano, salt, garlic powder, onion powder, red pepper flakes, and black pepper

Top with cheese

Whisk eggs and milk; add mustard powder

Pour egg mixture over meat and cheese

Bake for 1 hour

Cheesy Beef Sausage and Wild Rice Casserole

1lb Ground Sausage

1 box Long Grain and Wild Rice

2 cups shredded cheddar cheese

1 can Golden Mushroom soup (Do not substitute with Cream of Mushroom)

 

  • Cook up the wild rice using instructions on the box
  • While you cook your rice, brown the sausage, drain if necessary.
  • Once rice is cooked, mix all your ingredients together - rice, sausage, cheese, and soup.
  • Bake in oven at 350 for 30 minutes.

The best part about this recipe to me is that it is freezable.  (The most magical word to a busy mom!).  Once you've mixed your ingredients, pour into a freezer casserole dish, cover with foil, place in freezable zip lock.  When you're ready to enjoy or perhaps you want to gift this to a friend - thaw and bake 350 for 30 minutes.
