All About Our Meats
Pasture Raised
All of our steers, also known as feeder cattle, selected for freezer beef are raised 100% on pastures with access to fresh clean drinking water.
High Forage Diet
Our feeder cattle are fed a total mixed ration (TMR) which we mix daily from locally sourced commodity based ingredients. Part of our ration includes corn silage, which we’ve grown ourselves. Did you know the corn plant is considered a grass? The harvest process of corn silage includes chopping the entire corn plant - stalk, leaf, cob, grain. Which means the bulk of our TMR is grass based as the corn silage makes up about 80% of the ration.
The last 45-60 days before harvest we will introduce more corn into the designated steer’s diet to develop that intramuscular fat aka marbling.
If ordered and requested well in advance strictly grass finished is an option.
We also grow all the hay that is baled or wrapped into baleage which is fed or shredded into our grain ration.
No Antibiotics
Clover Leaf fully believes in the use of antibiotics for the health and wellbeing of our herd however no antibiotics are used in our feeder cattle. If antibiotics are necessary for a feeder, they would be withdrawn from the feeder program.
No Growth Hormones
We do not implant any growth hormones into our cattle.
Dry Aged
Once feeder cattle are ready for beef processing, the carcass is dry aged for a minimum of 21 days. By dry aging the meat is in a controlled temperature environment, the natural enzymes in the beef breakdown adding an undeniable flavor and tenderness.

Pork
Hogs are finished on a corn diet. Individual cuts and pork shares are available.
Lamb
Our sheep are all pasture raised and co-mingle with our cattle herd. Multi-species grazing can be very beneficial for the health of the pasture and health of the animals, since the various animals eat different plants and have different internal parasites. Wethered lambs are processed under one year of age to ensure meat is tender. No antibiotics or hormones. Lamb sold by the whole or half. Individual cuts limited.
Chicken
2024 was our first year raising and processing broiler chickens. We raised small batches of Cornish cross chickens which finished about 6-8 weeks of age at which point we harvested on the farm and averaged about 5 pound birds. We built chicken tractors which we would move daily to expose fresh grass. All tractors included grain feed and fresh water. No antibiotics or hormones. Whole chickens available, very limited quantities on cut pieces.
Returns
We do not accept returns on any of our meat products including shares, individual cuts, and snacks.
